Pretty glad today was a snow day. My energy was below sea level and I’ve been feeling ill since reintroducing solid food back into my life. I got nothing done today...which I know is the point of a snow day and completely shut down city, but...
As dramatic & miserable as I was the first 10 days, I’m considering jumping back into the January juice if only for a few days a week or meals a day until the month is over. 🤷🏻♀️

🥥Breakfast Prep 🍶 My husband eats the exact same breakfast eeeerrrrryday. It’s somewhere between overnight oats and chia pudding. In the mix is oats, coconut, chia, ground flax, cinnamon and vanilla soaked in either oat or rice milk. Easy to prep, easy to serve and eat in the wee hours of the morning 🌞

loaded baked (purple) sweet potato fries 😋 tried to make a vegan cheese sauce, but it just didn’t work! these fries tasted delicious though!

🍉 WATERMELON Monomeal🍉 Yah or Nah?
I miss to monomeal on juicy fruits! It’s so easy to do it during the summer when you have this kind of juicy watermelon, sweet mango, peaches etc. Eating one fruit, in enough quantity as a meal, is great to give a break to the body so it can work on purging out the junk. When they’re less fruits available like now, I do banana monomeals🍌 once in a while and that’s perfect as well👌

Why is granola so good? With zucchini oats it's fantastic and makes me so glad that I love breakfast food. Also, another fun fact, if you are looking for fruit that will last a long dang time, fresh cranberries are definitely that fruit. 🙃
For breakfast I set some simple intentions. I've been journaling instead of going on my phone. Helps me stay focused on the morning and I get way more accomplished. I enjoyed a bowl of zoats that I also mixed in with maca (inspiration by @frommybowl) and I totally dig it. Maca has an earthy caramel flavor to it. I remember first trying it and hating it, but have definitely grown to love it. ❤️

Roasted Sweet Potato + Avocado Bowl 🥑😍🔥🍃🎉 || It's (almost) the weekend, you guys! I love making this bowl - it's packed with nutrients and taste.....and avocado --- so you know it's gonna to be good. 💁🏻🥑 I just roasted a small sweet potato (slices) for 40mins at 425F (flip midway) + roasted 1/4 red onion + sliced a delicious ripe avocado + steamed some brocollini + sliced some cucumber ribbons + added some red cabbage + seasoned chickpeas + cilantro + sesame seeds.

On top of the fact that Martha Stewart just reposted my photo on her Instagram *dies* I’m having a pretty productive day! I did two recipe tests & they’re alllll written up ready to go. One includes this amazing dish of herbed baked tofu with lemon orzo & roasted broccoli! Super easy dish and absolutely DELICIOUS! I hope you guys are having an amazing day!
Does anyone ever get tricked by gloomy weather and wake up thinking it’s early then you realize it’s 10:30???? It was so dark & I was so excited to sleep more then I checked my phone and was like OH NO! It was a good sleep though so I can’t complain. Avocado toast with tomatoes & nut free pesto = life. Vegan protein pancakes drizzled in blueberry & lemon compote, almond mousse, vanilla coconut yoghurt and sprinkled in toasted coconut & almonds 🥞. Just demolished this with my boyfriend after the gym 💪🏼
Ingredients ~ chia or flax egg, 2 scoops protein powder (I used @sfnutrition), almond milk (I used @pipandnut), vanilla extract, ground oats. Mix all together to form a thickish mixture and fry in coconut oil. The compote is made using frozen blueberries, lemon & maple syrup reduced in a pan. ☺️
