Every time I come to Olympia, I have to hit up Value Village thrift store 🛒♻️ When I was growing up we were very poor. My mom had cool vintage style which influenced me & I grew up having to be creative with thrift store finds. There was a short period of time I tried to hide it in middle school because I was embarrassed but by 14 I was owning it & wearing giant plaid old man pants cut into shorts, vintage dresses and so much polyester 😂 I even got “Most Vintage” (kinda like “Most Unique”) in 9th and 12th grade year book! #randomfacts
I continue to get a lot of me & Fisher’s clothes this way (I’m also a big fan of @poshmark too!) Today I found so many great clothes for Fisher and found a couple super cute things for myself, like this @ralphlauren southwestern moto sweater jacket thingy 🙌
The grocery’s are “my thing”... my fiancé and I split bills, and I’m in charge of the food...
....except, he picked me up today and insisted on getting stuff for dinner... and 5 other meals...
I about had a heart attack as he was throwing stuff in the cart (especially since I’ll be gone for three days for work)...
He paid for it all, but still. Does anyone else get crazy when their SO de-rails their plans!?!?
Vegan Carrot Children of The Corndogs ********
How you do: 2 quarts of water + 2 T pickling spice + 2 T table salt + 2 T liquid smoke + 1 T Kitchen Bouquet + 5 peeled carrots. This is basically a brine that is going to give your carrots hot dog flavor. I know it seems like a lot of salt and seasoning, but tougher vegetables require more seasoning to permeate their hard exterior. Carrots are pretty much rebels, okay? And you're not going to drink your fake hot dog water, so you're not going to actually ingest all of that salt, unless this is like that episode of Friends where Ross was going to drink the fat, in which case you're on your own. Boil the carrots in the brine liquid. Remove carrots when they're parboiled (as if you were boiling potatoes for potato salad). Toss hot carrots with about 1 T of melted coconut oil. Heat grill pan, and grill carrots until they're well marked. When cool enough to handle, slice carrots into chunks to fit donut hole pan or muffin tin. ******
For the cornbread part: I used a vegan cornbread mix (Chichi's restaurant brand), and then made the appropriate vegan substitutions per the directions. If you're using the Chichi's Sweet Corn Cake mix like I did, add a vegan egg to it (I like Bob's Red Mill Egg Replacer). I also stirred in a few tablespoons of salsa verde. The mix is sweet as it states, and the salsa verde balances that with a little smokey heat. Bake at 350 degrees. These won't brown a whole lot, so just pull them when they look set and dry. Allow them a moment to set up before removing your carrotdogs from the pan or they will fall apart. Enjoy!

American Chop Suey 😋
• Ground Turkey • Rigatoni Pasta • Red & Yellow Pepper • Broccoli • Spinach • Mushroom • Onion • scallions • Cilantro • Basil Tomato Sauce •Sauté scallions, fresh ginger, garlic with olive oil • Add Ground turkey
• Seasoned with salt, pepper, soy sauce, basil, chili powder, lemon juice, dill weed
• Add mushrooms, broccoli, onions, Red & Yellow Pepper, Spinach to ground turkey. About 6-8 minutes for the vegetables to soak in with the turkey.

#Vegan#OnaBudget ? @officialpandaexpress has you covered. Granted only one dish of their 14 entree options was purely #plantbased but that’s still right on par with the recent liberal statistic that says about 5% of the US Population Identify as Vegan (2017), up from half a percent in 2008 and 600% up in Google searches (the word Vegan) . I got the plate with a half and half side of brown rice and steamed veggies and two portions of Eggplant Tofu. #Delicious , #Convenient , & #CostEffective but a key point to watch out for is the oil and sodium content in a dish like this. Would like to see that eliminated from my food sources but I guess you can’t win em all. One day they will eliminate excess amounts... or maybe I’ll just have to open my own deliciously plant based, healthful , fast-food restaurant. Are there any of #daveramseys principles that you don't follow 100%?! 🙈 Mine would be the use of our credit card. Just one the only one we've ever had. We use it for our fixed expenses, and for the promotions they may offer for extra cash back as long as it something we'd purchase regardless. For example this quarter is extra cash back on gas ⛽️ We immediately pay off the purchases the minute that it processes on the credit card!💳 The rewards aren't HUGE each month but the little bit of extra helps and I call it a win in my book!✨Two of my favorite ways to use the rewards are... One: To direct deposit any amount to my bank account. New day, same breakfast! Every morning starts with a bowl of 100% whole grain oats. We were able to pick up a bulk tub of Quaker oatmeal from Grocery Outlet which contains 30 servings - all for only $2.99. Accompanied by a tall glass of water to start the day of right, and you have a total meal cost of $0.09.
