Chicken and sweet potato zoodles for an easy-ish lunch 🤗 I have been having these sweet potato noodles at least once a week because they’re just so good 😍 I make them with my @kitchenaidusa spiralizer attachment 👌🏻 I had the chicken prepped and the zoodles already cut, just had to toss them in a pan with lots of ghee 😎 Sautéed the mushrooms along with them 👌🏻 I always have to eat lunch around 2 on Fridays because of my class schedule 😬 But this meal makes the wait oh so worth it 💯 The last of my meal prepped goods though 🙄 Gotta survive the weekend now without them 😅 #thestruggle 😂 I’m running errands now then heading home to eat dinner and get ready to go out with friends tonight 💃🏼 Happy Friday people!! Simple and delicious lunch from yesterday. A big bowl of baby spinach, avocado, roasted sweet potatoes, and a @hilaryseatwell veggie burger. Free of gluten, dairy, soy, corn and all other common allergens, these are my favorite veggie burgers and I always have some on hand for a quick and hearty meal!
When I first started living a “healthy lifestyle” and being “that” girl, i was embarrassed about some of the things I’d eat. I definitely would not have shared this 🍪 CHICKPEA COOKIE DOUGH 🍪 with friends or family, but why hide delicious, healthy food from them?! I am who I am and I’m not ashamed of it. And for a double win, everyone LOVES this and I’ve made it three times in the past week- SCORE 👍🏻 .
Add 1 can drained chickpeas + 1/3C smooth PB + 2T maple syrup + 1t vanilla + dash of salt. Pulse until combined and add 1T almond milk at a time until it is smooth. I usually have to add about 2T! Stir in 2T mini chocolate chips. Served with pretzels and chocolate graham crackers!

1/3 C of cauliflower rice
1 pasture egg
1 TBSP of olive oil
Salt, cumin, and garlic! (You can honestly add any veggie or protein you want. I didn’t have any at the moment bc were towards the end of the week or I would have loaded it😝)
What to do: Preheat the waffle maker, and mix all the ingredients and seasonings together. This will make one serving, so just pour it all on the waffle maker, and let it heat up for 3-5 minutes. DONE. #_afreshpurefood
