I like to call this "Everything on a plate". I have a terrible habit when my health gets bad of eating bad foods cause I'm a comfort eater since way back 😏 and my health has been really bad this last week. So i promised myself i was gonna eat a shitload of plants this week. What better wsy to start than this?! Spinach, Quinoa, Edamame, Mung Beans, Capsicums, Avocado, Kumara (Sweet Potato), Homemade Pickled Red Onions Chickpeas, Sunflower Seeds, Pumpkin Seeds and Drizzled with Tahini. So bloody delicious but this plate is huge so this is also lunch for tomorrow. I'm already excited 😍
Smashed avo 💚
I had my favourite breakfast combination of smashed avo, poached eggs, mushrooms, tomato and toast. A few seeds and greens were scattered on top and overall it was a lovely breakfast. At home I'm used to much bigger portions! Double the amount of veggies and toast. But it's good to have less and feel satisfied. I love bread but want to cut down on the amount I have. I'll still double the mushrooms and tomatoes though! 🍄🍅💛
Today we're exploring the city and hopefully getting our bag back! We sent one of our rucksacks by freight train from Ho Chi Minh to Hanoi so it would be easier to travel the country with our moped and just one bag. It's been so nice traveling so lightly; that actually we don't want it back... Fingers crossed it actually made it though! .
